Pan-fried Salmon Bones
Ingredients:
500g salmon trim or frames
½ t salt
White pepper
1 T cornflour
2 T oil
Opito Bay Salt – to finish
Method:
1. Wash salmon and pat dry with paper towel. If required, cut into pieces.
2. Place the salmon in a bowl and sprinkle with salt, pepper and cornflour. Mix well, being careful of any sharp bones. Leave to marinate for 30 minutes.
3. Heat oil in a fry pan on medium heat. Add salmon and cook for 4-5 minutes or until golden brown. Turn over and repeat on the other side until crispy.
4. Remove from the heat and sprinkle with your favourite Opito Bay salt. Serve immediately.
