Pasta with Smoked Salmon & Broccoli
Ingredients:
300g penne pasta
1 T butter
2 T plain flour
2 C skim milk
¼ C sour cream
½ C grated cheddar cheese
350g broccoli, trimmed, cut into small florets
400g hot smoked salmon, flaked
1 C breadcrumbs
2 T olive oil
1 lemon, rind finely grated
1 T chopped chives
Method:
- Cook pasta in a large saucepan of boiling, salted water following packet directions, until almost tender. Add broccoli and cook for 4-5 minutes or until pasta and broccoli are cooked.
- Meanwhile, lightly grease an 8-cup capacity baking dish. Heat butter in a large saucepan over low heat. Add flour, stir to combine and cook for 1 minute. Gradually add milk, stirring constantly until thickened. Add sour cream and cheese and stir until smooth. Season well with salt and pepper.
- Drain pasta and broccoli and return to saucepan. Add cheese sauce and salmon. Stir to combine then spoon pasta into baking dish.
- Preheat grill on high heat. Combine breadcrumbs, olive oil, lemon rind and chives in a small bowl. Sprinkle crumb mixture over pasta. Place under grill for 2 to 3 minutes or until golden and crisp. Serve.
