Salmon & Dill Bagel-Burgers

 

Ingredients:

600g boneless salmon pieces

1 t finely grated lime rind

2 T coarsely chopped fresh dill (or 1 t dried)

1 clove garlic, crushed

1 avocado, halved, stoned, peeled, finely chopped

1 spring onions, trimmed, thinly sliced

1 red chilli, seeded, finely chopped

1 T lime juice

1 t extra virgin olive oil

1 T olive oil

4 bagels, split, toasted

Oak lettuce leaves, to serve

Mayonnaise, to serve

 

Method:

  1. Place salmon, lime rind, dill and garlic in the bowl of a food processor. Season with salt and pepper. Pulse 6-8 times or until salmon is coarsely chopped and mixture just comes together. Divide mixture into four even portions. Shape each portion into a 12cm patty. Place on a plate; cover with plastic wrap. Refrigerate for 30 minutes to rest.
  2. Combine the avocado, spring onion, chilli, lime juice and extra virgin olive oil in a small bowl.
  3. Heat the oil in a large frying pan over high heat. Add the salmon patties and cook for 2-3 minutes each side or until golden brown and just cooked through. Remove from heat.
  4. Place a bagel half on serving plates and spread with mayonnaise. Top with lettuce leaves and a salmon patty. Spoon over avocado salsa and an extra dollop of mayonnaise. Top with remaining bagel half and serve immediately.
